Cheap breakfast trick - waffles

We’re usually in a rush on weekday mornings, and the kidlet gets grumpy if he’s always presented with a bowl of cold cereal. Today I spent 1/2 hour hanging out with the waffle iron, and we now have a big ziploc of waffles in the freezer, ready to throw into the toaster to reheat them.

Waffles (makes LOTS)
3 cups flour
1 teaspoon salt
3 tablespoons sugar
4 1/2 teaspoons baking powder
2 1/4 cups milk
3 eggs
6 tablespoons melted butter or canola oil

Mix the dry ingredients, make a well in the center, add the milk, eggs, and oil, and mix in. Easy.

    Waffles are so much better than pancakes in my opinion. The texture holds the butter and syrup better and the toasted crisp surface is a great contrast to the soft interior. It’s also easy to through in other ingredients like berries or nuts for a change of pace.

    Hah! When I was a kid, I felt *really* lucky if my box of cereal had a name brand on it. Waffles? Pancakes? Please!
